It is a Cheese worked exclusively raw goat milk. White milk inside and gray crust because sprinkled vegetable ash during drying which, in addition to enhance the taste, limits the formation of natural molds. Before eating Charbonet cheese it is necessary an aging time of 30 days. It comes from a herd of Saanen goats located 950 m on Cuneo hills.

WINES: still white wines.
BEERS: low alcoholic graduation blondes.
TASTE: Intense flavor, firm, slightly sour inside.
