Is a fresh stretched-curd stuffed cheese filled with buffalo milk stracciatella 61% (cream and pieces of stretched-curd buffalo milk cheese). Min 52% fat in dry matter.
INGREDIENTS: Pasteurized milk, pasteurized buffalo milk, UHT cream, salt, rennet. Acidity regulator: E270.
PAIRINGS: It is often approached to Parma Ham D.O.P as a starter.
WINES: The ideal combination is achieved combining it with a dry wine and light as the Fiano di Avellino DOCG. Thanks to the intense flavor and juicy well is also accompanied by a young red wine and not matured in barrels like Dolcetto d’Alba Ratti.
TASTE: From the unmistakable taste, is perceived the sweet on the tip of the tongue, salty and sour side on the bottom.
FORM, COMPOSITION:White in color pearly porcelain, has a smooth, shiny surface with a thin crust around a millimeter thick. They are visible on the surface of the pads which are to indicate the user point of detachment of the burrata from the mass of dough. By cutting it with a smooth blade knife, you can immediately observe creamy heart of stracciatella enclosed inside.

MATURING: This type of cheese is not matured.
