Parmigiano Reggiano is produced in an area that includes the provinces of Parma, Emilia, Modena, Bologna and Mantua. This Parmigiano Reggiano is produced and selected directly by his son Joseph and his grandson Lorenzo Occelli in Emilia. There are forms of about 40-45 cm with convex top 20-30 cm. It is produced from 100% cow’s milk with no additives or thickeners different. It is a natural and genuine product. Outside shows a crust distinguished by the mark of the Parmigiano Reggiano Consortium on the whole pale yellow rind. Inside has a grainy texture, soluble and crumbly white or pale yellow. It is an excellent table cheeses to be enjoyed alone as a snack or a meal. Referred to as a grating cheese, it can be served with jams, honey and fresh fruits.
